About Wheat in Kentucky

Wheat is the primary small grain in Kentucky. Other small grains grown in the state include rye, barley, oats, triticale, spelt and Canola, which are grown on much fewer acres. Soft red winter wheat (Triticum aestivum) grown in Kentucky provides flour for cookies, cakes, pastries and crackers. Hard red winter wheat is grown in the Great Plains and is used for breads. Durum wheat is grown in the Northern Great Plains and is used for pasta. White wheat is commonly grown in the Pacific Northwest and is mostly exported to Asia.
